Mascarpone Tart with Honey Roasted Figs
  • 120 gr. (1/2 cup) butter, cubed
  • 12 gr. (1 tablespoon + 1 teaspoon) vegetables oil, I used sunflower oil
  • 60 ml. (4 tablespoons) water
  • 30 gr. (2 tablespoons) sugar
  • Pinch of salt
  • 200 gr.(1 ½ cups) all purpose flour
  • 230 gr. (1 cup) mascarpone
  • 75 gr. (5 tablespoons) sugar
  • 120 gr. (1/2 cup) full fat yogurt
  • 240 ml. (1 cup) heavy cream
  • 1 teaspoon vanilla extract
  • 250 gr. (7 oz.) figs, ~ 20 small
  • 60 gr. (3 tablespoons) honey
  • 60 ml. (4 tablespoons) water
  • 15 gr. (1 tablespoon) butter
  1. For the crust:
  2. Preheat your oven to 210°C/410°F.
  3. Mix the butter, oil, water, sugar and salt in a large stainless steal bowl and place it in the oven.
  4. Let the mixture stay in the oven until the butter is completely meted and starts to brown around the edges.
  5. Remove from the oven and dump in the flour. Mix quickly using a wire whisk until completely incorporated.
  6. Let the tough cool for a few minutes and transfer it to a 26 cm/10 inch tart pan.
  7. With your fingers to distribute the dough evenly on the bottom and up the sides of the tart pan.
  8. Use a fork to pierce the dough
  9. Place the tart in the oven and bake until golden all over, approximately 20 minutes.
  10. Let cool completely on a wire rack.
  11. For the filling:
  12. Place the mascarpone and sugar in a bowl and use a mixer to beat it on medium speed until smooth, approximately 2 minutes. Add the yogurt and beat until incorporated.
  13. Place the cold heavy cream in a separate bowl and whip on high speed until stiff peaks form.
  14. Gently fold the cream into the mascarpone mixture.
  15. Fill the cooled tart shell with the cream.
  16. For the honey roasted figs:
  17. Slice the figs in two.
  18. In a large skillet heat the honey and water over medium heat for a few minutes until it bubbles and liquids is slightly reduced.
  19. Stir in the butter.
  20. Place the figs over the honey mixture and cook for 2-3 minutes on each side.
  21. Arrange the figs over the mascarpone filling.If you like you can drizzle more honey over the figs.
