Daylight saving time has happened. Yesterday we made the switch and, even though I love the result of it and the long warm days that are coming our way, today I feel bummed out. My poor body is just not meant for waking up at 6:30 AM. It is not even meant for waking up at 7:30 AM, but some how I’ve found the way to persuade it to do it. But not today, obviously 6:30 is not negotiable. The good thing is that today is almost over, and hopefully tomorrow I will enjoy a new fresh start of the new time, because summer is coming and a little sleep deprivation can’t ruin this for me. Dear women all over the globe, Happy Women’s Day!
I hope today you receive the attention and respect that you deserve. And I also hope that every day of the year you are loved and appreciated for the things that you do. Cheesecake is the one think that I nailed since day 1. Yes, it has happened to have cracks, and in the beginning I had a lot of issues with an old oven, but despite the little bumps in my way, cheesecake has always been a success, taste and texture wise. This dessert was a total improvisation. It started with the idea of an orange curd, then I decided to place the orange curd on a crust, make it like a pie and more nibbly (is this a word? spell check says “no!”). After that I thought it will be nice if I add another element to compliment the taste of the orange curd, so I included Bavarian cream. Butter crust did not look so appealing at this point. I replaced it with a Joconde. In my head the dessert was starting to look a lot like a cake. Naturally, a cake needs something to put on top of it to make it look finished, orange gelle stepped in.
